For Waffles
1 cup pancake or waffle mix
¾ cup milk
1 egg
1 tbsp melted butter

For the Chicken
1 lb boneless, skinless chicken tenders or breast (cut into 2-inch pieces)
1 cup buttermilk
1 cup flour
½ cup cornstarch
1 tsp garlic powder
1 tsp paprika
½ tsp salt
Oil for frying (canola or vegetable)

Marinate the Chicken, Place chicken in a bowl with buttermilk. Let it sit for at least 10 minutes (or overnight for more flavor).

Make the waffles, whisk your waffle mix, milk, egg, and butter. Heat your waffle maker and cook mini-sized waffles. Set aside.

Coat and fry the chicken in a shallow bowl, mix flour, cornstarch, garlic powder, paprika, and salt. Dredge each piece of chicken in the flour mix.

Heat oil in a pan (about 350°F). Fry chicken pieces for 4–5 minutes on each side or until golden and cooked through. Place on paper towels.

Assemble the sliders, place one waffle down, stack with chicken, and top with another waffle. Secure with a toothpick or mini skewer.
