Strawberry Shortcake French Toast

French toast always brings the comfort. But when you throw in juicy strawberries, fluffy whipped cream, and a golden bake that fills your kitchen with buttery magic—you’ve got something that’s begging for a second (or third) helping. Our Strawberry Shortcake French Toast Bake is a crowd-pleaser that’s perfect for slow Sundays, school breaks, or special mornings when boxed cereal just won’t cut it.

It’s fast enough for busy families and fancy enough for brunch parties—especially when you serve it hot with a dollop of love (and whipped topping).

Summary

Prep Time: 15 minutes | Cooking Time: 45 minutes
Estimated Ingredient Costs: $15

For the French Toast
1 loaf of brioche or challah bread, cubed (day-old works best)
4 eggs
1½ cups whole milk
½ cup heavy cream
1 tsp vanilla extract
¼ cup brown sugar
1 tsp ground cinnamon
¼ tsp salt

For the Strawberry Shortcake
1½ cups fresh strawberries, sliced
2 tbsp white sugar
1 tsp lemon juice
1 cup whipped cream (store-bought or homemade)
Powdered sugar (optional, for dusting)

Place sliced strawberries in a bowl. Add white sugar and lemon juice. Stir and set aside for at least 10 minutes. This brings out their natural syrup—kids can stir this part with glee!

Let it rest for 5 minutes. Spoon whipped cream over each slice, drizzle with strawberry syrup from the bowl, and finish with powdered sugar if you’re feeling fancy.

In a separate bowl, whisk the eggs, milk, heavy cream, vanilla, brown sugar, cinnamon, and salt until smooth.

Grease a 9×13 baking dish. Spread half the cubed bread across the bottom. Spoon half of the sugared strawberries across. Repeat with another bread-strawberry layer.

Slowly pour the custard mixture over the bread. Press gently to make sure every cube gets a soak. Let it rest for 15 minutes. (Or refrigerate overnight if prepping ahead.)

Preheat oven to 350°F. Cover with foil and bake for 30 minutes. Then remove the foil and bake another 15 minutes until golden brown and puffy.

Have your child crack the eggs (into a separate bowl, just in case) and whisk the custard ingredients.

Dusting powdered sugar or helping with whipped cream at the end gives them a “finishing touch” moment.

  • Dairy-Free? Use oat milk and coconut cream.
  • No strawberries? Try blueberries or peaches.
  • Gluten-free? Use your favorite gluten-free bread loaf.
  • Kid Tip: Let little hands layer the bread and strawberries. They’ll love the ownership—and the sticky fingers.
